Food pairings: Pleasantly persistent on the palate with a good note of freshness. Suitable for meat appetizers, fresh pasta dishes, and white meats. Surprisingly good with grilled fish and grilled shrimp.
Winemaking: The grapes are harvested towards the end of September and, after careful manual selection, are gently pressed and left to ferment in horizontal macerators at a controlled temperature for 5-8 days. Maceration includes both pumping over and punching down for accurate extraction of the noble components of the grape. After devatting, the wine is placed in steel tanks and then rests in the bottle for another 2 months.
