Maceration includes both pumping over and punching down for a thorough extraction of the noble components of the grapes. Brief ageing on the lees with malolactic fermentation, followed by 40% of the wine resting for 6 months in French barriques and the remainder in steel tanks for 29 months. After bottling, it ages for another 6 months in the bottle.
