Savuto - Controlled Designation of Origin D.O.C.
Type: Unoaked Red Wine
Colour: Intense ruby red, with violet reflections, tending towards garnet with aging
Aroma: Intense, reminiscent of wild berries, cherry and spice
Taste: It is concentrated and well-balanced, with a persistent finish of sour cherry, cherry and liquorice
Serving temperature: Excellent at 19°C
Food pairing: It pairs very well with red and white meats prepared in various ways. Ideal with aged Crotonese pecorino cheese from the cellar and cured meats from Calabrian black pork
Vinification: The grapes are harvested, strictly by hand, around the beginning of October and after a careful manual selection, they are softly pressed and placed to ferment in vertical fermenters at a controlled temperature for 5-8 days. Maceration includes both pump-overs and punch-downs for a careful extraction of the noble components of the grape.
Aging: After racking, the wine rests in steel tanks and then rests in the bottle for another two months.
